A parasite that causes diarrhea has been detected in 31 states: How to prepare food and what to avoid
- A cyclosporiasis outbreak has sickened people in 31 states since May 1 (843 confirmed, 86 hospitalized as of July 9) and officials are still investigating the source with no recalls yet.
- Foods previously linked to cyclospora—lettuce, raspberries, basil, cilantro, green onions, snow peas and bagged salads—are being avoided by some; washing may not remove the parasite, while cooking (≥158°F) destroys it.
- Symptoms (watery diarrhea, nausea, fatigue, etc.) usually start about a week after exposure, so infections can be hard to trace; most recover at home but severe cases can be treated with antibiotics.
